  • 6 fresh green chilies
  • 2 tbsp fresh ginger, peeled
  • 4 garlic cloves
  • 2 shallots
  • ΒΌ cup cilantro stems
  • Zest and juice of 2 limes
  • 1 tsp turmeric powder
  • Β½ cup full-fat coconut milk
  • 1 tsp shrimp paste (or soy sauce for vegetarian)

Instructions

  1. Gather and wash all ingredients. Peel garlic and ginger.
  2. In a blender, combine green chilies, ginger, garlic, shallots, cilantro stems, lime zest and juice, and turmeric powder. Blend until smooth.
  3. Add half the coconut milk for better blending; mix until creamy.
  4. Taste and adjust seasoning with more lime juice or salt as needed.
  5. Store in an airtight container; refrigerate for up to one week or freeze for longer.
