Description

  • 1 fresh baguette
  • 2 cups ripe tomatoes (diced)
  • 1 cup fresh basil leaves (chopped)
  • 2 cloves garlic (minced)
  • 4 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar (optional)
  • Salt & pepper to taste

Instructions

  1. Preheat the oven to 400Β°F (200Β°C).
  2. Dice the tomatoes and chop the basil; combine them in a bowl.
  3. Add minced garlic to the tomato mixture; let marinate for 15 minutes.
  4. Slice the baguette diagonally into Β½ inch pieces and brush both sides with olive oil.
  5. Arrange on a baking sheet and bake for 5-7 minutes until golden brown.
  6. Top each toasted slice with the tomato-basil mixture.
  7. Drizzle with additional olive oil and season with salt and pepper before serving.
