Ingredients

Scale
  • 4 bone-in, skin-on chicken thighs (about 1.5 lbs)
  • 2 tablespoons olive oil
  • 3 tablespoons freshly squeezed lemon juice
  • 2 teaspoons garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, garlic powder, smoked paprika, salt, and pepper to create the marinade.
  2. Place the chicken thighs in a resealable bag or bowl, pour the marinade over them, and ensure they are thoroughly coated. Marinate in the fridge for at least 1 hour or overnight for better flavor.
  3. Preheat your grill to medium-high heat (about 400°F).
  4. Remove the chicken from the marinade and place it skin-side down on the grill grates. Grill for 7-8 minutes until charred.
  5. Flip the chicken over and grill for another 7-8 minutes until it reaches an internal temperature of 165°F.
  6. Remove from grill, let rest for a few minutes, then serve with extra lemon juice if desired.
