  • 57 lbs beef brisket
  • 1/4 cup brown sugar
  • 2 tbsp paprika
  • 2 tbsp garlic powder
  • 2 tbsp onion powder
  • 1 tbsp salt
  • 1 tbsp black pepper
  • 1/2 cup apple cider vinegar
  • 1 cup low-sodium beef broth
  • 2 cups hickory or mesquite wood chips (soaked)

Instructions

  1. Trim excess fat from the brisket, leaving about a quarter-inch layer.
  2. Combine apple cider vinegar with half the BBQ rub and coat the brisket. Marinate in the fridge for at least 4 hours or overnight.
  3. Preheat smoker to 225°F (107°C).
  4. Place brisket fat side up on smoker grates, sprinkle with remaining BBQ rub, and add soaked wood chips.
  5. Smoke until internal temperature reaches 195°F (90°C), approximately 1 hour per pound.
  6. Wrap in foil and let rest for at least one hour before slicing.
