Instructions
- Rinse quinoa under cold water until clear. In a saucepan, combine quinoa with 2 cups water. Bring to a boil, then reduce heat and simmer for 15 minutes until fluffy.
- While quinoa cooks, chop cucumber, cherry tomatoes, and red onion. Place in a large bowl.
- Once quinoa cools slightly, add it to the vegetable mixture and stir until combined.
- Drizzle olive oil and lemon juice over the salad; season with salt and pepper. Toss well.
- Gently fold in crumbled feta cheese and chopped herbs.
