  • 2 cups fresh parsley, finely chopped
  • ½ cup fresh mint leaves, finely chopped
  • 1 cup cherry tomatoes, halved

  • ½ red onion, finely diced
  • Juice of 1 large lemon (about 3 tablespoons)
  • 3 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse bulgur wheat under cold water until clear. Place in a bowl and cover with boiling water. Let sit for 15-20 minutes until tender; drain excess water.
  2. While bulgur soaks, chop parsley, mint, cucumber, and onion finely.
  3. Halve cherry tomatoes and add to the chopped vegetables.
  4. In a large bowl, combine soaked bulgur with the chopped ingredients.
  5. In a small bowl, whisk lemon juice, olive oil, salt, and pepper; drizzle over the salad.
  6. Toss gently to combine and serve chilled or at room temperature.
