  • 1 lb baby potatoes
  • 4 cloves fresh garlic, minced
  • Β½ cup unsalted butter
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400Β°F (200Β°C) and line a baking sheet with parchment paper.
  2. Halve the baby potatoes, toss them with olive oil, salt, and pepper, and spread on one side of the baking sheet.
  3. In a skillet over medium-high heat, melt 2 tablespoons of butter and sear seasoned steak pieces until browned on all sides (about 3-4 minutes), then remove from heat.
  4. Add minced garlic to the skillet with remaining butter; once fragrant (about a minute), add the seared steak bites and toss to coat.
  5. Transfer both the potatoes and steak bites to the baking sheet; roast for about 15 minutes until potatoes are tender.
