Ingredients
- 4–5 bone-in chicken pieces
- 2 cups long-grain basmati rice
- 1 large onion, finely chopped
- 4 garlic cloves, minced
- 2 ripe tomatoes, chopped (or 1 can diced tomatoes)
- 2 tbsp Kabsa spice mix (cumin, coriander, allspice)
- 1/4 cup raisins (optional)
- 1/4 cup toasted pine nuts (for garnish)
- Salt to taste
- Water (as needed for cooking)
Instructions
- Prepare your ingredients: chop onions and mince garlic.
- In a large pot over medium heat, sauté chicken pieces until golden brown. Remove and set aside.
- In the same pot, add onions and garlic; sauté until translucent (about 5 minutes).
- Stir in tomatoes and Kabsa spice mix; simmer for another 5 minutes.
- Return chicken to the pot and layer rinsed basmati rice evenly over it.
- Add enough water to cover by an inch; bring to a boil.
- Reduce heat, cover tightly, and simmer for 25 minutes or until rice is fluffy.
