  • 1 lb boneless, skinless chicken breasts
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large onion, sliced
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fajita seasoning
  • 4 flour tortillas (8-inch)
  • Juice of 1 lime
  • Β½ cup sour cream

Instructions

  1. Slice the chicken into thin strips and chop the bell peppers and onion.
  2. In a bowl, toss the chicken with olive oil and fajita seasoning until well coated.
  3. Heat a skillet over medium-high heat; add the seasoned chicken and cook for about 5 minutes until golden brown.
  4. Add the sliced peppers and onions; stir-fry for another 5 minutes or until the veggies are tender-crisp.
  5. Remove from heat and squeeze fresh lime juice over the mixture.
  6. Warm tortillas in another pan or microwave. Fill each tortilla with the chicken mixture and top with sour cream.
