Instructions
- Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds.
- In a skillet over medium heat, sauté the chopped onion in olive oil until translucent, about 5 minutes. Add minced garlic and cook for an additional minute.
- Add ground turkey to the skillet and cook until browned, approximately 8 minutes.
- Stir in diced tomatoes and cooked rice or quinoa. Season with salt and pepper.
- Stuff each bell pepper with the turkey mixture, top with cheese, cover with foil, and bake for 30 minutes. Remove foil during the last 10 minutes for browning.
