  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds.
  2. In a skillet over medium heat, sauté the chopped onion in olive oil until translucent, about 5 minutes. Add minced garlic and cook for an additional minute.
  3. Add ground turkey to the skillet and cook until browned, approximately 8 minutes.
  4. Stir in diced tomatoes and cooked rice or quinoa. Season with salt and pepper.
  5. Stuff each bell pepper with the turkey mixture, top with cheese, cover with foil, and bake for 30 minutes. Remove foil during the last 10 minutes for browning.
