- 1 small onion, diced

- Spices: cumin, paprika, salt, and pepper
Instructions
- Preheat your oven to 375°F (190°C). Slice the tops off the bell peppers and remove seeds. Rinse under cold water.
- In a skillet over medium heat, sauté diced onion in olive oil until translucent. Add minced garlic and cook for another minute.
- Add ground beef to the skillet; cook until browned, breaking it apart as it cooks.
- Mix in cooked rice, tomato sauce, cumin, paprika, salt, and pepper. Simmer for about 5 minutes.
- Stuff the mixture into each prepared pepper and pack tightly.
- Place stuffed peppers upright in a baking dish, cover with foil, and bake for 25 minutes. Remove foil, sprinkle cheese on top, and bake uncovered for an additional 10 minutes until golden.
