  • 1 lb lean ground beef
  • 1 cup cooked rice (white or brown)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 1 cup shredded cheese (cheddar or mozzarella)
  • Spices: cumin, paprika, salt, and pepper

Instructions

  1. Preheat your oven to 375°F (190°C). Slice the tops off the bell peppers and remove seeds. Rinse under cold water.
  2. In a skillet over medium heat, sauté diced onion in olive oil until translucent. Add minced garlic and cook for another minute.
  3. Add ground beef to the skillet; cook until browned, breaking it apart as it cooks.
  4. Mix in cooked rice, tomato sauce, cumin, paprika, salt, and pepper. Simmer for about 5 minutes.
  5. Stuff the mixture into each prepared pepper and pack tightly.
  6. Place stuffed peppers upright in a baking dish, cover with foil, and bake for 25 minutes. Remove foil, sprinkle cheese on top, and bake uncovered for an additional 10 minutes until golden.
