  • 1 ripe avocado, mashed
  • 2 tbsp freshly squeezed lemon juice
  • ΒΌ cup fresh cilantro, chopped
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 large head of romaine lettuce (about 8 leaves)
  • Β½ tsp cumin (optional)

Instructions

  1. In a mixing bowl, mash the rinsed chickpeas until slightly chunky.
  2. Add the mashed avocado, lemon juice, garlic powder, salt, pepper, and cumin (if using) to the chickpeas. Stir gently until combined.
  3. Fold in chopped cilantro.
  4. Take a romaine lettuce leaf and spoon generous amounts of the chickpea-avocado mixture onto it.
