Instructions

  1. In a large bowl, combine rolled oats, shredded coconut, almond butter, honey or maple syrup, lemon zest, chia seeds, and vanilla extract. Mix until well combined.
  2. Roll the mixture into bite-sized balls (about 1 inch in diameter). If sticky, dampen hands slightly for easier rolling.
  3. Place the energy balls on a parchment-lined baking sheet and refrigerate for at least 30 minutes until firm.
  4. Store in an airtight container in the fridge for up to one week or freeze for longer storage.
